What We’re Eating This Week
Welp. I’ve cooked two different things this week, and they were both meh. I made chicken alfredo, and it was too salty (but otherwise … flavorless?). It also made enough to feed an army, so that’s not awesome. I made a mushroom + cream cheese pasta, too. It’s … okay. Craig isn’t impressed because it doesn’t have meat. #eyeroll
Here’s what else is on the agenda this week:
- Easy Shepherd’s Pie – I need something that I *know* will be good, but also cleans out some pantry items. This is that.
- Giant Quesadillas – SOLD at Jalapeno Ranch (also SOLD because my kid will eat this all day long).
What We’re Reminiscing About
Sometimes in the fall, I get super antsy. Craig indulges me, we hop in his pickup, and we just drive. We come to a T in the road, he looks at me, and I choose. No maps. No destination in mind. No place to be. Two years ago, I was feeling especially trapped. We left Iowa and traveled to Wisconsin and Minnesota. I think we got home at ten or eleven that night, but we hit the SPAM museum, I got to see the Mayo Clinic, and we bought cheese in Wisconsin on the banks of the mighty river. It’s about time for another trip just like that, I think.
What We’ve Been Loving
This is an odd smattering, but here we go:
- Yardbird & Bovine Bold (For Craig to cook with)
- Laundry Scoops (Perfect for laundry soap stuff)
- Wax Melt Warmer Liners (If you have a wax melter thing, this is awesome for keeping the mess contained!)
What We’ve Been Up To
This weekend, we’re hosting family at our house, so we’ve been planning and cleaning. Friends, I was on my hands and knees cleaning the downstairs bathroom baseboards last weekend. How do those get so dirty?! Craig is going to barbecue a bunch of stuff, and the fam-bam is bringing a bunch of sides. We’ll put the bounce house up, and it’s going to be perfect weather. Sometimes, I think to myself that these right here? These are the golden days, you know? These are the days we’ll think about when we’re old and Craig is in the nursing home. (Don’t tell him I said that about the nursing home.)
What We’ve Been Working On
A literary magazine.
Yea. You read that right.

What We’ve Been Reading
Would you like a roundup of what Tuck has been reading? We’ve found some amazing children’s books recently that we’ve really been loving. Maybe I’ll do that this week still.
I’ve been reading “Becoming Bulletproof: Life Lessons From a Secret Service Agent” and it’s basically blowing my mind. I also have “We Begin at the End” on my radar, and “What’s Mine and Ours” (I hear it’s a once-in-a-lifetime read kinda thing).
